Cloves are the dried flower buds of Syzygium aromaticum — not the stem, not the fruit, the bud. That detail matters because the bud contains the highest concentration of eugenol, the compound responsible for clove's intense, warm, spicy-sweet aroma. Eugenol also has well-documented analgesic and antimicrobial properties, which is why it's been used in dentistry and traditional medicine for centuries.

Most bulk cloves sold commercially lose their bud heads during mechanical harvesting and processing — you're left with stems and fragments. A whole clove with the head intact looks different, smells sharply different, and cooks differently. It releases flavor more slowly and completely.

Eugenol: what makes cloves unique

Clove essential oil is 72–90% eugenol, making it one of the most chemically concentrated spices on earth. Eugenol is responsible for the intense, warming numbing sensation you get when you bite a clove — the same property exploited in dentistry (oil of cloves has been used as a topical dental analgesic for centuries).

Eugenol is also a potent antioxidant. Cloves have the highest ORAC (Oxygen Radical Absorbance Capacity) value of any food item regularly tested — higher than acai, cacao, or other high-antioxidant staples you'd recognize. This doesn't mean eating cloves by the handful is advisable; it means that small amounts in cooking add significant antioxidant load to a dish.

Beyond antioxidant capacity, published research on eugenol has explored anti-inflammatory pathways, antimicrobial effects, and potential modulation of gut health. As with all spices, the research is early-stage — but the mechanistic basis for traditional uses is increasingly well-supported.

How to use whole cloves

In chai and spiced drinks: Add 2–3 whole cloves to your chai masala or mulled wine/cider. Simmer gently — cloves release their oils slowly in liquid. Remove before serving (biting a whole clove is an experience).

In biryani and rice dishes: A standard biryani uses 4–6 whole cloves bloomed in ghee at the start. The heat ruptures the bud and releases eugenol into the fat, which then coats every grain of rice.

In spice blends: Ground clove is a component of garam masala, five-spice powder, and pumpkin spice blends. Grind from whole for significantly more aroma — a spice grinder or mortar works well.

In braised meats: Whole cloves can be studded into onions for slow braises (boeuf bourguignon, pot roast) or whole ham. They infuse gently over long cooking and can be removed before serving.

In baking: Ground clove works in apple pie, gingerbread, speculaas cookies, and holiday cakes. Use sparingly — clove is potent and can easily overpower.

Cloves have been prized for centuries, and Sri Lanka developed one of the world's strongest clove-growing traditions. Its highland terroir produces a distinctive flavor profile.

Sri Lanka's highland cloves — grown in the Kandy and Kurunegala districts — are prized for being highly aromatic, rich in essential oil, and slightly sweeter in finish than commodity cloves. The cool highland climate and traditional cultivation produce buds with exceptional eugenol content.

Storage and shelf life

Whole cloves, properly stored, are one of the longest-lasting spices in your kitchen. In an airtight container away from heat and light, whole cloves retain full flavor for 2–4 years. This makes them an excellent investment spice — you don't need to use them quickly.

Once ground, the oils dissipate within weeks. If you're using clove in baking or spice blends, grind small batches from whole on demand rather than keeping a jar of pre-ground.

The easiest storage test: open the jar and take a deep breath. If the cloves still smell aggressively of eugenol — that warm, almost numbing spice-dentist aroma — they're fresh. If the aroma is muted, they've aged past their best.
