Heavy metals in spices is an uncomfortable topic for anyone who sells them, including us. But it's a real one, it's well documented by independent testers and federal regulators, and the honest version of the story is more useful than a reassuring one.
What the testing actually found
Consumer Reports examined 126 products spanning 15 herb and spice types from 38 brands, testing each for arsenic, cadmium and lead. Roughly a third — 40 products — carried combined levels its experts considered concerning when eaten regularly at typical serving sizes by children, with most of those also raising concern for adults. Lead levels in 31 products exceeded the maximum daily amount anyone should consume.1
The results varied enormously by category. Oregano and thyme fared worst — every product tested in those categories showed concerning levels. But seven of the fifteen categories had no concerning products whatsoever: black pepper, chili powder, coriander, curry powder, garlic powder, saffron and sesame seeds. White pepper also performed well across every brand tested.1
Why "organic" doesn't answer this question
This is the finding worth sitting with: CR reported that neither brand name nor organic certification predicted which products came back clean. Their testing could not establish that any one brand was consistently better or worse than another, and organic products showed no advantage over conventional ones on heavy metal content.1
That isn't a knock on organic certification — it's a question of scope. Organic standards govern how a crop is farmed: which pesticides and fertilizers may be used, whether GMO seed is permitted, how the soil is managed. Heavy metals aren't applied during farming. They're taken up from the soil the plant grew in, and as the FDA explains, they occur naturally in the environment and are often present at higher levels where past industrial use or pollution left them.2
A certification that regulates farming inputs simply isn't designed to answer a question about soil geology. We hold USDA Organic certification ourselves, and we'd rather say plainly what it does and doesn't cover than let a seal imply something it was never meant to.
What the FDA does
The FDA prioritizes four elements — lead, arsenic, cadmium and mercury — because exposure to them carries the most significant public-health impact, especially during the window of active brain development from pregnancy through early childhood.2 Through its Total Diet Study, the agency has sampled grocery products nationwide for decades, testing them for hundreds of contaminants.3 Its Closer to Zero initiative sets out the approach for reducing childhood exposure to these contaminants in food over time.4
What the FDA has not done — and this is the practical gap — is set enforceable limits for heavy metals across the spice category generally. Consumer Reports noted that New York is the only US state that regulates heavy metals in spices, using a 1 part-per-million lead threshold that triggers a recall.5
So what actually answers the question?
If certifications describe farming practice and federal limits are still developing, the only thing that tells you what is in a particular bag of spice is a test of that particular batch.
That's what a Certificate of Analysis is: a lab report tied to a specific lot number, showing what was measured and what was found. Should I stop using spices?
That isn't what the data suggests. CR's findings were category-specific — several common spices showed no concerning products at all — and the concern relates to regular consumption at typical serving sizes rather than occasional use. The practical takeaway is to know what you're buying, not to avoid spices.
Can heavy metals be removed from a spice?
No. Consumer Reports is explicit that once lead is present in a herb or spice, there is no way to remove it, and no way to stop a plant absorbing it from the soil it grows in.5 This is precisely why sourcing and batch testing matter more than processing.
Does organic certification mean lower heavy metals?
Not according to this testing. CR found organic products showed no advantage on heavy metal content.1 Organic certification governs farming inputs and practices; heavy metal content is driven by soil conditions.
What should I ask a spice brand?
Ask whether they test each batch for heavy metals, and whether they'll share the Certificate of Analysis for the lot you bought. A brand that tests regularly will usually have one ready.
